SOME RULES TO FOLLOW IN ORDER TO AVOID UNPLEASANT LABOUR ACCIDENTS

The problem of labour accidents is not new. If we read newspapers or we watch television we realize that every day different workers are victims of labour accidents by jeopardizing their lives. According to a survey, it seems that Italy is one of the Country having the highest rate of death and lesions because of labour accidents. This obviously causes a heavy loss for community and firms. Every entrepreneur and every worker, including those who work at a pizzeria’s small laboratory, must particularly pay attention to some rules to prevent even the smallest labour accidents from happening.

  • Work machines: a constant danger

The machines, daily used at a pizzeria’s laboratory, can hide some perils and be extremely dangerous for workers’ health and integrity.

The danger of an object can depend on the material by which it is made (for example the asbestos frees particles in the air) on its shape ( cutting and sharp-cornered) on its dynamism (machine in motion).

However, there are some building measures that are included in the category of passive or intrinsic safety and that are the result of a careful designing. The designing of a machine for pizzeria must foresee ergonomical features ( it mustn’t have corners or cutting parts and must be comfortable and quick to use). Moreover it must be easy to clean and must be able to use materials at "low- yieldingness" that means that the machine mustn’t free particles of building materials.

There are also some equipment having active protections that act by stopping the machine when they are spurred, thus increasing the degree of safety. The active protections are linked to switches that stop the movement of the machine when they are raised or taken away in order to enter a dangerous area (such as the kneading arms of kneading machines). Any protection must not be taken away even if the work is little more difficult.

  • The oven.  Another dangerous place is the oven

All the heating means, to produce efficiently the heat to warm up the oven, need a good ventilation. Moreover, it is necessary to have a flue chimney with a proper section and a good draught to let the burnt gases off.

The burners of the gas oven, considering the danger of this fuel,have better system of safety. In fact there are two safety-valves that close the emission of gas both when the oven is off and when an accidental event happens.

In case of necessity it is always important to remember that there is a supplementary faucet outside the room that stops the emission of gas in case of leak. If you desire to install an important alarm system there are some devices that acoustically inform you that there is gas in the air.

However, it is advisable to check periodically the efficiency of the burner and of all the system of emission and to put the fire-extinguishers near the oven. The fire–extinguishers too must be regularly checked.

  • The electric installation

First of all the electric installation of the laboratory must be in accordance with the law. Therefore it must be equipped with an efficient system of grounding to which all the equipment must be linked. In this way the electric circuit will be able to discharge on the ground electric discharges. Furthermore all the electric lines must be provided with a differential gear that stops the electric circuit when an electric phase is accidentally put in touch with the ground. It is also necessary to provide the above electric lines with the switches that break off the electric current in case of excessive consumption of electricity as the lines could fuse causing high risks of fire and electrocution.

However, the first valid rule to follow in order to avoid unpleasant labour accidents, is to observe the safety rules of installations and machines. Secondly by the instructions, it is wise to provide for the protection of safety of employees by obliging them not to damage the securities for time’s sake, to work always using stopped machines and above all not to act as a specialized technician .
